On January 24th, a member of the Kosher Strasbourg team went to its partner Koenig Wines in Dambach-la-Ville (France) to proceed with the disgorging of its crémant production.
Crémant disgorgement, what is it ?
The crémant disgorgement is a step in the process which allows it to obtain its essential bubbles. It consists in eliminating the deposits formed during the second fermentation in bottles. The bottles are turned over so that the deposits slide into their necks, which will be immersed in a bath at -25°C to form an ice cube that traps the deposits. This ice cube is ejected when the bottle is opened.
Why was the Kosher Strasbourg team present at this operation?
From the harvest to the bottling of wines and other sparkling wines, all wine operations must be carried out by a Rabbi or a rabbinical delegate if one wants his production to be Kosher.
The disgorging operation is done in a semi-automated way, but the opening of the bottles is still manual, as a consequence one of the members of our team must open them before proceeding to the second capping.
